  • 2 tablespoons olive oil For sautéing the onions.
  • 1 medium white onion, finely diced Provides sweet and aromatic essence.

For the sandwich

  • 8 slices fluffy, buttery Texas toast Base for the sandwich.
  • 1 cup sharp cheddar cheese Adds bold and creamy flavor.
  • 0.5 cup mozzarella cheese Provides a stretchy texture.
  • 0.5 cup unsalted butter For grilling the sandwiches.
  • 2 teaspoons chopped cilantro For garnishing before serving.

Instructions
 

Prepare the beef

  • Season the shredded beef with salt, pepper, and your favorite spices.
  • Place it in a slow cooker with water and beef bouillon powder.
  • Cook on low for about 8 hours until tender, then shred the beef.

Sauté the onions

  • Heat olive oil in a skillet over medium heat.
  • Add diced onions and sauté until translucent and soft.

Combine flavors

  • Combine the shredded beef with enchilada sauce in the skillet.
  • Let it simmer for about 10 minutes to meld the flavors.

Assemble and grill

  • Butter one side of each slice of Texas toast.
  • Assemble the sandwich with one slice of toast butter-side down, add cheddar cheese, beef mixture, more cheese, and finally another slice of toast butter-side up.
  • Grill on medium heat for 3-4 minutes on each side until golden brown and cheese melts.

Serve

  • Cut the sandwiches diagonally and garnish with chopped cilantro.
