  • 12 pieces corn tortillas Soft and pliable.
  • 1 cup Birria grease (warmed) Adds flavor and texture.
  • 2 cups Birria meat (shredded) Cooked until fork-tender.
  • 2 cups shredded Oaxaca (or Chihuahua cheese) Key ingredient for gooey texture.
  • 1 cup Birria broth (warmed) For serving and dipping.
  • 0.5 cup diced white onion Provides crunch and sharpness.
  • 3 pieces radishes (chopped or sliced) Adds peppers and crunch.
  • 0.25 cup cilantro (chopped) For freshness.
  • 0.25 cup Mexican crema (or sour cream) Adds creaminess.

Instructions
 

Preparation

  • Cook the Birria meat with spices and herbs until fork-tender. Shred it and let it soak in its juices.
  • Warm the corn tortillas in a skillet for about 30 seconds on each side.
  • Place shredded Oaxaca cheese in the center of each tortilla.
  • Layer shredded Birria meat, diced onions, and chopped cilantro on top of the cheese.
  • Fold the tortilla in half, dip it in warmed Birria grease, and fry in a skillet until golden brown, about 2-3 minutes on each side.
  • Serve the tacos with a bowl of warmed Birria broth and garnish with fresh radishes and a drizzle of Mexican crema.

Notes

For best results, always warm tortillas before filling, use ample cheese, and maintain moderate frying temperature to avoid burning.
