Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a mixing bowl, whisk together flour, baking powder, and salt.
  • In another large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Gradually add the egg whites, vanilla extract, and almond extract, mixing until fully incorporated.
  • Alternately add the dry ingredients and whole milk to the mixture, beginning and ending with the flour. Mix until just combined.
  • Fold in the finely chopped maraschino cherries and cherry juice.
  • Pour the batter into the prepared pans and smooth the tops with a spatula.

Baking

  • Bake for 25-30 minutes or until a toothpick comes out clean from the center.
  • Allow the cakes to cool in their pans for about 10 minutes before transferring them to wire racks to cool completely.

Frosting

  • In a mixing bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, mixing on low speed.

Assembly
