  • Begin by placing the boneless, skinless chicken breasts at the bottom of your slow cooker.

  • Pour in the chicken broth, watching it cascade over the veggies and chicken.
  • Sprinkle the Italian seasoning, salt, and black pepper over the mixture.
  • Pour in the creamy chicken soup and the heavy cream, stirring gently to combine.
  • Cover the slow cooker and set it to cook on low for 4-6 hours or on high for 2-3 hours.
  • About 30 minutes before serving, stir in the potato gnocchi and baby spinach.
  • Just before you’re ready to serve, stir in the shredded Parmesan cheese.

Notes

Layer the ingredients properly, with chicken at the bottom and don't lift the lid too often while cooking. If you're looking to lighten the dish, consider using low-fat cream alternatives or whole wheat gnocchi.
