Preparation

  • Rinse the shrimp under cool water and pat them dry. Slice the smoked sausage into rounds, dice the red bell pepper and zucchini, and cut the asparagus into bite-sized pieces.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté for 5-7 minutes until browned and crispy.
  • Stir in the minced garlic, onion powder, paprika, salt, and black pepper. Cook for about a minute until fragrant.
  • Toss in the diced red bell pepper, asparagus, and zucchini. Cook for another 5-7 minutes until the vegetables are slightly softened.
  • Add the shrimp and chicken broth, cooking for an additional 3-5 minutes until the shrimp turn pink and opaque.
  • Enjoy the dish warm from the skillet, optionally garnished with freshly chopped herbs or a sprinkle of lemon juice.

Notes

Ensure your skillet is hot before adding oil, and don’t overcrowd the skillet. Stir frequently for even cooking. For an extra kick, add hot sauce as desired.
