Instructions

Marinate the Chicken

  • In a medium mixing bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and black pepper. Whisk until smooth, then add the chicken breasts and ensure they are well-coated. Cover the bowl and refrigerate for at least 1 hour—overnight for maximum flavor.

Prepare the Vegetables

  • While the chicken is soaking up all those flavors, chop your mixed vegetables into bite-sized pieces. The vibrant colors of bell peppers, crisp cucumbers, and sharp red onions will make your dish visually appealing and fresh.

Cook the Chicken

  • Preheat your grill or skillet to medium-high heat. After marinating, remove the chicken from the marinade, letting any excess drip off. Grill the chicken for approximately 6-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (75°C).

Make the Tahini Feta Sauce

  • In a clean bowl, mix together tahini paste, crumbled feta cheese, lemon juice, and minced garlic. Gradually add water, stirring until you achieve your desired consistency—smooth and creamy, yet pourable.

Assemble the Bowls

  • Allow the chicken to rest for a few moments after grilling, then slice it into strips. In serving bowls, layer your prepared vegetables at the base, top them with slices of chicken, drizzle generously with tahini feta sauce, and finish with fresh herbs for garnish.

Notes

For optimal flavor, marinate chicken overnight. Grill or pan-sear on medium-high heat for the best results. Allow chicken to rest for juicy, flavorful meat.
