Ingredients

For the Cooking

  • 1 cup Water Essential for cooking the rice.
  • 1 can Canned coconut milk Transforms jasmine rice into a creamy side.

For Serving

  • 1/4 cup Fresh cilantro, chopped Adds brightness as a garnish.

Instructions
 

Marinate the Chicken

  • In a bowl, combine the maple syrup, soy sauce, Sriracha, garlic powder, smoked paprika, and salt. Whisk until well mixed.
  • Add the chicken and ensure it is thoroughly coated with the marinade. Cover and marinate for at least 30 minutes (up to 2 hours for best flavor).

Cook the Jasmine Rice

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice and water, bring to a boil.
  • Reduce heat to low, cover, and simmer for about 15 minutes. Remove from heat and let it sit for an additional 5 minutes, then fluff with a fork.

Prepare the Coconut Rice

  • In a separate pot, heat the coconut milk over low heat.
  • Add the cooked jasmine rice to the pot with the coconut milk and stir gently until well combined. Warm through.

Sear the Chicken

  • Heat olive oil in a skillet over medium-high heat.
  • Add marinated chicken pieces and sear each side for about 5-7 minutes until golden brown and cooked through (internal temperature of 165°F).

Serve

  • Plate a generous serving of coconut rice, top with spicy maple chicken, and garnish with fresh cilantro. Serve lime wedges on the side.

Notes

Tips: Rinse rice to avoid stickiness, adjust Sriracha for spice level, and avoid overcrowding chicken in the skillet.
