Ingredients
  

Crust

  • 1 cup vanilla wafer cookies (broken in half) These will form a crunchy, sweet crust for your cheesecake.

Filling

  • 24 oz cream cheese Ensure it is at room temperature for easy blending.
  • 0.5 cup powdered sugar Sweet and fine, this helps balance the richness of the cream cheese.
  • 0.25 cup light brown sugar Adds depth and warmth to the filling.
  • 1 tsp vanilla extract Enhances the overall flavor profile.
  • 0.5 tsp coconut extract Pairs perfectly with the other ingredients.
  • 1 cup caramel sauce Provides an indulgent finish.
  • 0.75 cup toasted sweetened coconut flakes Provides a chewy texture and coconut flavor.
  • 1.25 cups heavy whipping cream Whipped for lightness.
  • 0.5 cup powdered sugar (for whipped cream) Sweetens the whipped cream perfectly.
  • 0.25 cup mini chocolate chips Gives extra texture and sweetness.

Ganache

  • 3 oz semi-sweet chocolate chips Used for topping.
  • 0.25 cup heavy whipping cream (for ganache) Combined with chocolate chips for a ganache.

Instructions
 

Preparation

  • Start by crushing the vanilla wafer cookies until they resemble fine crumbs. Mix them with melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan, creating an even layer. Bake in a preheated oven at 350°F for about 10 minutes, then allow it to cool completely.
  • In a large mixing bowl, use an electric mixer to beat the cream cheese, powdered sugar, and light brown sugar together until the mixture is smooth and creamy. Add in the vanilla and coconut extracts.
  • Gently stir in the caramel sauce and half of the toasted coconut flakes into the cream cheese mixture.
  • In a separate bowl, whip the heavy cream until soft peaks form. Gradually add in the powdered sugar while continuing to whip until stiff peaks form. Carefully fold this whipped cream into the cream cheese mixture.

Chilling

  • Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula, cover it well, and refrigerate for at least 4 hours, or overnight for best results.

Ganache Preparation

  • In a small saucepan, gently heat 0.25 cup of heavy cream until it starts to simmer. Remove from heat and stir in the semi-sweet chocolate chips, mixing until smooth and glossy.

Finishing Touches

  • Once the cheesecake is set, drizzle the chocolate ganache over the top. Then sprinkle the remaining toasted coconut flakes and mini chocolate chips on top.
  • Carefully remove the cheesecake from the springform pan by releasing the sides. Slice into wedges and serve.

Notes

For maximum success, ensure your cream cheese is at room temperature. Don't skip chilling the cheesecake for a perfect set. Use a springform pan for easy removal and presentation. Toast your coconut flakes for added crunch and flavor.
