  • 2 large boneless, skinless chicken breasts (about 8 oz each) Pounded to a 1/2-inch thickness
  • 2 tablespoons olive oil Divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 large yellow onion Thinly sliced
  • 8 oz cremini mushrooms Sliced
  • 1 packet brown gravy mix Prepared according to package directions
  • 1 cup shredded Monterey Jack cheese

Instructions
 

Preparation

  • Pound the chicken breasts to an even ½-inch thickness. Season both sides with salt, black pepper, garlic powder, and paprika.
  • Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. When shimmering, add the sliced onions and sauté for 5–7 minutes until they caramelize.
  • Add the sliced mushrooms to the skillet and cook for another 5–7 minutes. Remove from skillet and set aside.
  • In the same skillet, add the remaining olive oil and cook the seasoned chicken for about 5–6 minutes per side until golden and cooked through. Remove and set aside.
  • Prepare the brown gravy according to the package instructions.

Cooking

  • Return the chicken to the skillet, nestle among the onions and mushrooms, and pour the prepared gravy over the top. Sprinkle cheese generously on top.
  • Cover the skillet and let it simmer on low heat for 2–3 minutes until the cheese melts.
  • Serve immediately for the best results.

Notes

Serve with buttery mashed potatoes, green beans, or a fresh salad for a balanced meal. Pairs wonderfully with warm rolls.
