For the Toppings

  • 1 large yellow onion (sliced) Sweet and caramelizes beautifully.
  • 8 oz cremini mushrooms (sliced) Earthy and savory, enhancing the umami factor.
  • 1 cup brown gravy (prepared) A rich sauce to bring everything together.
  • 1 cup shredded Monterey Jack cheese Creamy and melty.
  • 1/2 cup shredded cheddar cheese Sharp and inviting.

Instructions
 

Preparation

  • Pat the chicken dry with paper towels and season generously with salt, black pepper, garlic powder, and paprika.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced yellow onions and sauté for 5-7 minutes until translucent.
  • Add the sliced cremini mushrooms to the skillet and cook until they turn golden brown, stirring occasionally.

Cooking

  • In the same skillet, add the remaining tablespoon of olive oil and increase heat slightly. Place the seasoned chicken breasts in the skillet, cooking for about 6-8 minutes on each side until they reach an internal temperature of 165°F (74°C).
  • Top each breast with the sautéed onions and mushrooms, pour the brown gravy over the top, and sprinkle with Monterey Jack and cheddar cheeses.
  • Reduce heat to low, cover the skillet, and let it simmer for 2-3 minutes until the cheese melts. Serve immediately.

Notes

Ensure chicken breasts are of even thickness for uniform cooking. Avoid rushing the sautéing of the onions and mushrooms for enhanced flavor. Watch the cheese for perfect melting.
