Preparation

  • In a large non-stick skillet over medium heat, add the lean ground beef. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
  • Stir in minced garlic and sauté for about 1 minute until fragrant.
  • Pour in soy sauce, chili sauce, and lime juice. Mix well.
  • Add carrots and bell peppers, cooking for an additional 2-3 minutes until they begin to soften.
  • Fill a shallow dish with warm water, dip rice paper wrappers for a few seconds, and then lay them flat on a clean surface.
  • Spoon 2 tablespoons of the beef mixture onto the lower third of the wrapper, add a few basil leaves, fold the sides in, and roll from the bottom up.
  • Repeat with the remaining wrappers and filling.
  • Serve warm or at room temperature with lime wedges and dipping sauce.

Notes

Tips: Use a wide skillet to brown your ground beef without overcrowding. Soak rice paper wrappers in warm water just until they become pliable; over-soaking can make them too fragile. Assemble immediately for best results.
